First, I will give you a marathon training update. I completed all three of my training runs on Monday, Tuesday, and Wednesday. Three days in a row was hard, but in a good way. It felt like a good challenge. Thursday and Friday are rest days because I have a Sprint Triathlon on the calendar for this Saturday
This is by far the easiest recipe I have made in a long, long time. It caught my eye in the August 2010 issue of Real Simple.

Brown Sugar-Glazed Pork
Ingredients
1.25 lb pork tenderloin
1/4 cup worcestershire sauce
2 tbsp brown sugar
Directions
In a small bowl, mix together worcestershire sauce and brown sugar. Season pork with 1/2 tsp kosher salt and 1/4 tsp black pepper. Grill over medium high heat, turning often, until the internal temperature reaches 150 degrees, 20 to 25 minutes. Brush with the worcestershire mixture during the last 5 minutes of cooking. Let rest for at least 5 minutes before slicing.

If you are a regular reader of the blog, you know that I like to cook in bulk, and usually double, if not triple a recipe. When cooking something new, I try not to make more than double in case we don’t like it, so for this one I decided to double the recipe, using 2.5 lbs of pork tenderloin.
I split the pork between 4 containers, and I cooked it in the oven instead of on the grill as stated in the original recipe.

Once it came out of the oven, I added potatoes and green beans to two of the dishes, which went to work with my husband for lunch. He likes a hearty lunch!

And I sliced off some of it for myself for dinner. (Please ignore the canned green beans. I am still trying to clean out my pantry, which seems to have an endless supply of canned green beans and peas.)

It was flavorful, healthy, and easy. This will be going into my rotation of recipes, especially for when I find pork tenderloin on sale.
