My new breakfast love…

overnight oats! Thanks to Angela at Oh She Glows, I was inspired to try her overnight oats since my workout schedule is still pretty non-existent with my back injury.  I modified the recipe a little bit and came up with the following.

  • 1/2 cup oats
  • 1.5 cup Almond Milk
  • 1 tablespoon of Flax Seeds (ground)
  • 1/2 tsp pure Vanilla Extract
  • Diced Banana
  • 1/2 cup of Strawberries
  • Palm full of cinnamon
  • 1 tablespoon of Stevia

Dicing the bananas into small pieces was the hardest part, which tells you how simple this recipe is.

Simply mix the dry ingredients, add in the wet ingredients and then the fruit and stir. I saved the cinnamon topping for last. I think everything taste better with cinnamon!

Put in the fridge overnight and you have a delicious breakfast waiting for you in the morning.

I split the recipe in half and then topped with more strawberries when I ate it to make it last two days. Soooo good!!You can modify this recipe many ways. Any suggestions? Have other readers tried this?

Yesterday was our 4th wedding anniversary so after a great breakfast I have dark chocolate to look forward to!

My husband gets us a mixed box so I eat 1/2 (the dark chocolate) and he eats the other 1/2 (the milk chocolate). He also surprised me with flowers. So sweet!

Getting ready to try this. If it works out well I have a new solution for the fast breakfast for kids in the morning. I’ll let you know how it works for our family.
