I spent WAY too much time working this weekend, but tried to fit in some healthy meals. I was inspired to create some new salads by the latest edition of Cooking Light. That led to a few other dishes. They have some fun combinations with chick peas, fruit, lots of veggies and even side salads that don’t include lettuce. Stay tuned for some new updates when I try them!
This post is all about food!! First we made Faijtas! (Which led to the salads, I love making meals that can be made into multiple things!) My fajitas were tortilla less but all you have to do is choose your favorite healthy dressing, marinade some meat (or just more veggies – we used Italian dressing and let it marinade for about 4 hours) and veggies and grill. Its super easy.
We used onions, red peppers and chicken. You can really put anything you want in this dish. I added a HUGE serving of corn and some colby jack cheese on top. Yum!
To better prepared for the week, we marinaded some extra chicken for salads for lunches. Today I have this to look forward to at lunch.
My salad includes grilled chicken, romaine lettuce, red peppers, tomatoes, carrots and 1/2 and avocado. I think avocado is enough to look forward to all in itself!
What is your favorite salad? How do you take your salads to work?
I pack my salads in a pyrex container the night before and then take a side of dressing with me. I like to shake everything up before I eat it in the container so its all evenly distributed.
Finally I made a double serving of South Beach Meat Loaf. This meat loaf includes a combination of onions, ground turkey and white beans. The beans give you an extra does of protein to keep you full.
No bread crumbs are in this recipe, but I sprinkled a small amount on top so the family would try it! It also called for mushrooms, which I skipped. It smelled and looked really yummy!
50 minutes later (cooking time that is, it took about 20 minutes to prepare) and we have enough meatloaf for weeks! Hopefully my planning this weekend will lead to a successful week of stinking to the rules and losing a few pounds before I have to put on a swimsuit!!
