Laughing Cow Chicken

A trip to Costco on Monday has left me with 5 pounds of boneless skinless chicken breasts.   I am short on my homemade stash of frozen meals, so tonight I made one of my favorite, easy recipes, Laughing Cow Chicken.  The below recipe is for 1 pound of chicken, but I tripled the recipe and will freeze the leftovers.

Laughing Cow Chicken

Ingredients

1 pound of boneless skinless chicken breast, split into 4 breasts

8 slices of deli-style ham slices

4 wedges of Laughing Cow Cheese

1/4 package of Shake N Bake

Directions

Preheat oven to 400 degrees.  Place each chicken breast between wax paper and pound to 1/4 inch thick.  Place 2 slices of ham and one cheese wedge on each chicken breast.  Roll chicken up and secure with toothpicks.   Spray baking dish(es) with Pam and place chicken breast edge side down on dish.  Sprinkle chicken with Shake N Bake.  Bake at 400 degrees for 35 minutes.

Before I roll up the chicken, I lay out everything so once I touch the raw chicken I don’t have to touch the package of ham or unwrap any of the cheese.  Don’t forget your toothpicks!

Because I cook a lot at once, I split the chicken between four containers.   Do you see where the missing piece was?  My neighbor stopped by and I sent him home with a piece of chicken :)

Dinner

I also made myself a huge tray of roasted vegetables, which I snacked on while I was waiting for the chicken to be done.  I wanted to use up leftover asparagus and a white onion before they went bad.   I sprinkled them with olive oil, lemon juice, garlic, salt and pepper and roasted them at 400 degrees for about 12 minutes.   They were really good, but the onion could have used a little longer time in the oven.

Workout Update

I went to the gym on Tuesday morning for a class called Body Works Plus Abs.  It’s during the hours that I used to work, so obviously I have never been to this class, but I knew enough to know that it was an instructor led weight training class.  The class was really hard, but I enjoyed it…until the next morning when I woke up and could barely move anything on my lower body.   Did I mention during the 1 hour class that we were doing squats and lunges almost constantly?  :)

I was really hoping that today I would feel better, but honestly it still hurts to sit, stand, and walk, although not quite as bad as yesterday.  Needless to say there hasn’t been any running, or other kinds of workouts,  in the past two days, and tomorrow will be a light workout day because I am doing a mini-triathlon on Saturday morning.

I did quite a bit of walking today (at the mall, does that count?) and I am going to find a yoga workout on ExerciseTV tonight to get in some good stretching.
