Yes our name is eat.scrap.run and believe it or not we do scrapbook every once in a while….its just been a while! Its always the last thing on the list! For once I am covering all three categories!
Eat
Yesterday I woke up and made what I am calling a “power bowl.” You can put whatever you want in this type of breakfast but on a Friday morning, this is what I was feeling.
My “power bowl” contained the following:
1/4 cup of oatmeal and 1/4 cup of skim milk (pop in the microwave for 1 minute)
1/4 cup of granola (this time was pumpkin spice w/ raisins)
1/4 cup of vanilla greek yogurt
Lots of cinnamon
I then piled ALOT of strawberries on top! What would you put in your power bowl?

Well I didn’t quit scrapbook yet, but I got inspired! Today I ran a Mother’s Day 5k with my girlfriend who is celebrating her first mother’s day (see Run below). At the end, a stationary company who sponsored the race handed out these cool prizes!
We got paper, recipe cards and cute crafty notecards for when someone calls or stops by when you are out! Stuff like this pushed my creative buttons. I always think “I could make that,” or “I could do that”, which I know I could if time wasn’t such an issue these days. Regardless it a good reminder, that I should take some time out to be “creative” soon! What creative projects inspire you? How do you make time to fit things like this in?
Run
5k’s are fun. They are quick and a great way to get a good workout in without a ton of training. This one was all about mom’s and kids which was very cool on Mother’s Day weekend. They even had a kids race before the real one started. I am pretty sure some of the 5 year olds could have kicked by butt!
The race was along the river which was very scenic. Too bad it was 52 degrees with about 20 mph winds! A good calorie burn!!

Happy Mother’s Day! We are celebrating with mini cupcakes and a new french toast recipe…
I can’t take credit for making this one, but it is delicious! My sister-in-law made French Toast Souffle for the fam.
She modified the recipe to use 2% milk and light syrup. Here are the original calories from Cooking Light.
