Saturday
Yesterday was my long run. My Garmin watch batteries died so I ran 70 minutes. My goal was 7 miles. My guess was I came close. It was 65 and sunny yesterday so I was able to get up early and enjoy the sunshine. After my run my husband and I went to the North Market. Its a farmers market type place in downtown Columbus. They have lots of vendors there ranging from fresh fish, smoothies and chocolates to flowers and bake wear.
I got a mini-waffle for breakfast and split it with my husband at the Taste of Belgium. It was SO good. I am sure it wasn’t good for you, but I figured I had a few extra calories to burn. It was topped with brown sugar and cinnamon and you just ate it plain. That is the sign of a good waffle! The owner calls them crack waffles. I can understand why. I could of eaten 10 of them and have been dreaming about them all weekend!
After the North Market I went to scrapbook with some of my girlfriends. Scrapbooking sometimes falls last on the list but I was determined to get my 2009 book done before I start classes next week. So I am officially caught up! My pages were pretty basic this time around but I think they turned out cute! Most of the pictures were from my sisters wedding so I didn’t want a lot of distractions on the page anyways!
This page was simply just torn paper with matching backgrounds under the pictures. I had a “blusing bride” sticker left over from a scrapbook I made my sister so I used it as decoration. I really loved the paper. It had cute little birds and round circle trees all over it.
The second page was from a template. The circular like design was copied in two different sizes and then layered. It made for a colorful page! This was actually paper that was left over from Valentines Day. Good thing red and pink can be used for lots of occasions!
Sunday
Today I was still dreaming about waffles so I tried a new pancake recipe. It was from Rachel Ray called “Crunch Berry Pancakes“
Ingredients
1 1/2 cups low-fat vanilla yogurt (I used non-fat greek)
1 egg plus 2 egg whites
1 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups of flour (I used whole wheat)
1 1/2 cups of low-fat granola
1 1/2 cups rasberries (I used frozen)
1 cup of blueberries
2 tablespoons vegetable oil (I skipped this)
4 teaspoons unsalted butter (skipped this too!)
4 teaspoons of confectioners sugar (skipped this too!)
Directions
Heat griddle or non-stick pan over medium heat. Whisk together the yogurt, whole egg, egg whites and 1/2 cup of water until smooth. Wisk in the baking soda and salt, then whisk in the flour until just blended. Stir in 1/2 cup granola and fruit. I only used 1/2 cup of frozen fruit instead of all the fruit listed above.
I skipped all the oil/sugar and just used non-stick olive oil spray and made 2 tablespoon size pancakes with a little granola sprinkled on top.
They state in the recipe that they are 498 calories, but I am guessing mine were a little less. They were very filling with the granola and the yogurt and a good source of protein!
Here’s to a good healthy weekend and some sunshine! I am working through my workout schedule this week so I’ll keep you posted. Today its rollerblading and Jillian’s yoga.
I am going to try level 2 today so we’ll see how it goes!
